Ingredients
- Garlic clove (2 unit)
- Rice (75 gram)
- Water (175 gram)
- Soy sauce (1 glug)
- Chilli (1 unit)
- Cod fillet (1 unit)
- Miso (1 dollop)
- Mirin (1 glug)
- Broccoli (1 handful)
- Sesame oil (1 glug)
Method
- Sprinkle salt over the fish and set it aside for 30 minutes. The salt will draw out excess moisture and reduce the odor of the fish.
- In a bowl, add the miso, mirin, and splash of water.
- Mix it all together and pour the marinade into a flat-bottomed airtight container.
- Gently pat the fish dry with a paper towel to remove the moisture.
- Place the fish in the container and coat both sides of the fish with the marinade.
- Cover the container and keep it in the refrigerator for up to 2-3 days.
- After the fish has marinated, prep it for cooking by wiping the marinade off the fish completely.
- Place the fish on a baking sheet lined with foil.
- Start the rice cooking.
- Fry the garlic, chilli and broccoli
- Grill under a high heat, with the fish c. 7cm away from the grill, for about 10 mins.
- Serve.
