Ingredients
- Garlic clove (2 unit)
- Rice (75 gram)
- Water (130 gram)
- Ginger (25 gram)
- Red chilli (2 unit)
- Red pepper (1 unit)
- Peppered mackerel (1 fillet)
- Soy sauce (1 glug)
Method
- Rinse the rice then add the water, and a bit of salt.
- Make a paste of garlic and ginger.
- Slice the chillies.
- Cut the pepper into bite-size chunks.
- Cut the mackerel into bite-size chunks.
- Start to boil the rice, then once bubbling, put to the lowest heat and cover. It should take about 10 minutes.
- On a relatively high heat, fry the garlic, ginger and chillies for a few seconds.
- Add the peppers.
- Once the peppers are getting charred, add the mackerel to warm through.
- Add a glug of soy sauce to the bottom of the pan and let it fry a bit.
- Serve the rice with the curry on top.
