Ingredients

Method

  1. Slice the courgette lengthways into thin strands (get rid of the middle bit if it's really watery).
  2. Slice the garlic & chillies.
  3. Fry the garlic, chillies, courgette strands in olive oil on a medium-high heat, and add salt. You want them a bit charred.
  4. Boil the linguine.
  5. Combine into one pan, with extra salt, oil, and some lemon juice.
  6. Gently stir off the heat to thicken the sauce.
  7. Serve with parmesan & lemon zest.
