Method

  1. Combine the flour, yoghurt & baking powder.
  2. Cube the aubergine, salt and place in a colander for about 20 minutes.
  3. Knead the flatbread dough a bit.
  4. Preheat the oven to 180°C.
  5. Crush the garlic.
  6. Dab the aubergine with kitchen roll to remove moisture, toss in oil & the garlic and roast.
  7. Preheat the cast iron pan on a medium-high heat & form the flatbread.
  8. When the aubergine is nearly done, fry the halloumi.
  9. Cook the flatbreads & serve.
